Vanilla Chamomile Cannabis Pudding

Ingredients

  • 2 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 3 tbsp dried chamomile flowers (or 4 tea bags)
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 3 large egg yolks
  • 1 vanilla bean, split (or 1 tbsp vanilla paste)
  • 4 tsp cannabis-infused honey, gently warmed (~5mg THC per tsp)
  • Whipped cream and chamomile flowers, to garnish

How to make it

    Heat milk, cream, and chamomile until just steaming. Cover and steep 10 minutes.

    Strain, discarding chamomile. Return to the pan.

    In a separate bowl, whisk sugar, cornstarch, salt, yolks, and vanilla.

    Slowly temper the warm milk into the egg mixture. Return to the pan and cook over medium-low heat, whisking constantly, until thickened—about 4 minutes.

    Remove from heat. Whisk in cannabis-infused honey while still warm (not boiling).

    Divide into 4 small glasses; press parchment onto the surface to prevent skin. Chill 2+ hours.

    Top with whipped cream and a few chamomile flowers before serving.
