Ingredients

  • 1.5 lbs boneless chicken thighs OR firm tofu, cubed
  • 3 tbsp Thai red curry paste
  • 2 (14 oz) cans full-fat coconut milk
  • 3 tbsp cannabis-infused coconut oil (~20mg THC total / ~5mg per serving)
  • 1 tbsp regular coconut oil
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 tbsp fish sauce (or soy sauce)
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro, sliced chili, and jasmine rice, for serving

How to make it

    In a deep skillet, melt regular coconut oil and brown the chicken or tofu in batches; set aside.

    Add ginger, garlic, and curry paste; stir for 1 minute until fragrant.

    Pour in coconut milk, fish sauce, and brown sugar. Simmer gently for 8 minutes.

    Return chicken/tofu to the pan along with bell pepper and snap peas. Simmer 6–8 minutes more until cooked through.

    Turn the heat OFF, then stir in the cannabis-infused coconut oil and lime juice—this preserves potency.

    Taste and adjust salt, lime, and chili. Serve over jasmine rice with cilantro and fresh chili.
