Ingredients

  • 2 ribeye or NY strip steaks (~1.25 inches thick)
  • 3 tbsp whole black peppercorns, coarsely cracked
  • 2 tbsp olive oil
  • 4 tbsp cannabis-infused butter, softened (~5mg THC per tbsp)
  • 1 small shallot, finely minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp lemon zest
  • Flaky sea salt

How to make it

    Mix infused butter with shallot, parsley, thyme, and lemon zest. Roll into a log in parchment and refrigerate.

    Pat steaks completely dry, season heavily with salt, then press cracked peppercorns onto both sides.

    Heat olive oil in a heavy skillet over high heat until shimmering.

    Sear steaks 3–4 minutes per side for medium-rare (internal 130°F / 54°C). Avoid moving them.

    Rest steaks on a warm plate for 5 minutes—this is critical for juiciness AND for placing the cannabis butter.

    Top each steak with a thick coin of compound butter so it melts gently into the surface.

    Slice against the grain and finish with flaky salt.
