
Pepper-Crusted Seared Ahi Tuna
Sashimi-grade tuna crusted in cracked pink and black peppercorns, seared rare, and finished with an infused soy-citrus glaze. A caryophyllene love letter.
Ingredients
- 2 (6 oz) sashimi-grade ahi tuna steaks
- 3 tbsp pink and black peppercorns, coarsely cracked
- 1 tbsp neutral oil
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp grated ginger
- Zest and juice of 1 lime
- 1 tbsp honey
- 2 tbsp cannabis-infused sesame oil (~5mg THC per tbsp)
- 1 tsp sesame seeds
- Pickled ginger, microgreens, and steamed rice, to serve
How to make it

Whisk soy, rice vinegar, ginger, lime, and honey. Set aside (off heat).

Pat tuna dry. Press peppercorns firmly onto all sides.

Heat neutral oil in a heavy skillet over very high heat. Sear tuna 30–45 seconds per side—the center should remain ruby red.

Transfer to a board to rest 2 minutes.

Whisk cannabis-infused sesame oil into the off-heat soy mixture (no further heating).

Slice tuna 1/4-inch thick against the grain. Spoon infused glaze over the top.

Serve with rice, pickled ginger, microgreens, and a sprinkle of sesame seeds.
