Wild Mushroom & Truffle Risotto
Slow-stirred arborio with a forest of mushrooms, a finishing pat of infused butter, and truffle oil. Earthy, umami, and unmistakably myrcene-forward.
Ingredients
- 1 1/2 cups arborio rice
- 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 6 cups warm vegetable or chicken stock
- 1/2 cup dry white wine
- 3 tbsp regular butter
- 4 tbsp cannabis-infused butter (~5mg THC per tbsp)
- 1 cup grated parmesan, plus more to serve
- 2 tbsp fresh thyme leaves
- 1 tbsp white truffle oil
- Salt and freshly ground pepper
How to make it
- 1
In a wide pan, melt 1 tbsp regular butter and sauté mushrooms over high heat until deeply golden; set aside.
- 2
In the same pan, melt remaining regular butter, then sweat onion until translucent, 4 minutes.
- 3
Add rice and toast 2 minutes, stirring. Pour in wine; let it absorb.
- 4
Add warm stock one ladle at a time, stirring frequently, allowing each addition to absorb before adding the next (about 22 minutes total).
- 5
When rice is al dente, return mushrooms to the pan with garlic and thyme. Stir 1 minute.
- 6
Remove pan from heat. Stir in parmesan, then the cannabis-infused butter and truffle oil until silky.
- 7
Plate, finish with extra parmesan and a few drops of truffle oil.
Cooking tips
- Adding cannabis butter and truffle oil off-heat preserves potency and aroma.
- Pair with a heavy-myrcene strain like Granddaddy Purple or Skywalker OG.
- For extra depth, soak 1/4 oz dried porcini in the stock first.

Why this pairing works
Myrcene — in your strain and on your plate
Myrcene is the most common terpene in cannabis and the engine behind many indica-style sedating effects. Earthy and herbaceous, it loves rich, slow-cooked, comforting foods.
