
Moroccan Lamb Tagine with Apricots
Slow-braised lamb shoulder with warm spices, dried apricots, and almonds. The finishing infused-oil swirl deepens the warm caryophyllene notes.
Ingredients
- 3 lbs lamb shoulder, cut into 2-inch chunks
- 3 tbsp olive oil
- 2 onions, diced
- 4 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 2 tsp ground cinnamon
- 1 tsp turmeric
- 1/2 tsp saffron threads
- 1 (28 oz) can diced tomatoes
- 2 cups chicken or lamb stock
- 1 cup dried apricots, halved
- 1/2 cup whole almonds, toasted
- 4 tbsp cannabis-infused olive oil (~5mg THC per tbsp)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- Couscous and lemon wedges, to serve
How to make it

Pat lamb dry, season with salt. Brown in olive oil in a heavy pot or tagine in batches; set aside.

Sweat onions in the same pot until soft. Add garlic, ginger, and spices; cook 1 minute.

Return lamb to the pot. Add tomatoes and stock. Bring to a simmer, cover, and braise at 325°F (165°C) for 1.5 hours.

Stir in apricots and continue braising 30–45 minutes more, uncovered, until the sauce is glossy and the lamb is fork-tender.

Remove from heat. Stir in cannabis-infused olive oil along with herbs.

Serve over fluffy couscous with toasted almonds, lemon wedges, and extra fresh herbs.
