Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 tbsp granulated sugar
  • 1 cup whole milk
  • 3/4 cup whole-milk ricotta
  • 2 large eggs
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 2 tbsp regular butter, melted
  • 1/2 cup pure maple syrup
  • 4 tbsp cannabis-infused butter, melted (~5mg THC per tbsp)
  • Fresh berries, to serve

How to make it

    Whisk flour, baking powder, salt, and sugar in a large bowl.

    In a separate bowl, whisk milk, ricotta, eggs, lemon zest, vanilla, and regular melted butter.

    Fold wet into dry just until combined—a few lumps are fine. Rest 5 minutes.

    Cook 1/4-cup portions on a lightly oiled non-stick skillet over medium heat, 2 minutes per side until golden.

    Off the heat, gently warm the maple syrup and whisk in the cannabis butter just until silky—do not boil.

    Stack pancakes, drizzle with infused maple, and top with fresh berries.

  • Resting the batter relaxes the gluten—tender, fluffy results.
