Ingredients

  • 3 lbs bone-in chicken thighs and drumsticks
  • 4 oz lardons or thick-cut bacon, diced
  • 1 bottle Burgundy red wine
  • 2 cups chicken stock
  • 8 oz cremini mushrooms, quartered
  • 12 pearl onions, peeled
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme, 2 bay leaves
  • 2 tbsp cannabis-infused herb oil
  • Fresh parsley for garnish

How to make it

    Brown chicken pieces in rendered lardon fat. Set aside.

    Sauté mushrooms and pearl onions until golden. Remove.

    Cook garlic and tomato paste 1 minute. Deglaze with wine.

    Return chicken, add stock, thyme, and bay leaves. Cover.

    Braise in 325°F oven for 90 minutes until fall-off-the-bone.

    Return mushrooms and onions for the last 15 minutes.

    Drizzle plates with cannabis herb oil. Garnish with parsley.
